Food and Drink:   We are lucky to have Alessandra, a local chef and wine expert, looking out for our gustatory needs. Alessandra’s meal plans can accommodate vegetarian, vegan, and gluten-free diets.

Breakfast:   Start your day at your own pace, with a fresh self-service continental breakfast (local baked goods, hot drinks, seasonal fruit, etc.). Guests can also opt to prepare their own breakfasts in the ample kitchen at La Casella.

Midday Meal:  In traditional Italian style, lunches will be scheduled times to gather and replenish, and will include a starter course (perhaps antipasto of locally cured meats and olives, or cheeses from the producers in the hills around us, or bruschetta), a main course (a primo or secondo--think homemade lasagna, squash risotto, grilled chicken, polenta with creamy gorgonzola, savory flans), a side dish (rice salad, mixed greens with salted apples, etc.), and traditional end-of-meal treats (hearty apple cake, lattice-top tarts with fresh apricot, tiramisù…)

Evening Meal: Alessandra's generous version of “simple” self-service meals to eat on your own schedule feature delectables such as Tuscan salami and local pecorino (sheep cheese), homemade pastas, minestre, salads, fresh bread, and traditional desserts…

Wine: Each participant can choose a meal plan with or without wine. Alessandra provides an excellent locally produced organic (unbottled) wine, but can also consult on and provide bottled wines (Brunello di Montalcino, Nobile di Montepulciano, Chianti, or others) on request.

Cooking Class: Accompany Alessandra to a local open-air market for fresh produce and other ingredients, return to the retreat kitchen for a cooking lesson, and then--"a tavola" (to the table)! Recipes included.
